Low*ish* Calorie Pizza

I mean… if you are desperate enough any pizza is good pizza! This is a recipe for a low calorie and low carb pizza.

Start with these tortillas, they are 50 calories and 4 net carbs

Dip a basting brush in olive oil and cover the tortilla. Sprinkle the tortilla with garlic and onion powder. Then take 1/4 of a cup of spaghetti sauce and cover the tortilla, 30 calories and 4 net carbs.

Sprinkle 1/6 a cup of mozzarella over the sauce, that is 40 calories and 1 carb. Space out 6 pepperoni, one in the middle and 5 around, 60 calories and no carbs

So in total for one pizza you are looking at 180 calories and 9 net carbs! That is pretty fantastic, we usually eat one pizza and a salad to get our greens.

Somehow we failed to get a cooked picture…. but it tastes amazing!

Shrimp Tacos

Hello all!! My husband and I are back on the weightloss wagon. He is down 10lbs and I am down almost 5, I have lost an entire 1.5 inch off my waist!

We are mainly focusing on our diet, “abs are made in the kitchen” and I am doing some strength training at least 5 days a week.

We are doing a low carb, not a no carb diet. We have had A LOT of salmon and broccoli these last 4 weeks! So I have been looking for something new to try and I found…. SHRIMP TACOS!!!

In total this meal is less than 350 calories

You get 4 of these bad boys!

So I started with a large bag of raw shrimp

I made homemade taco seasoning with salt, pepper, chili powder, paprika, cumin, onion powder and garlic powder. For a kick we added this habanero lime seasoning

It’s got a bite!

I diced up half a head of green and purple cabbage and I covered them in fresh lime juice. It was a salsa of sorts. For the sauce my husband mixed up mayo and sriracha. We only had miracle whip, I would not recommend it… it tasted weird and watery; but spicy!

You get 4 of these!!

Now just piece them together! Some salsa, 4 shrimp and sauce on each tortilla. It is a delicious, easy and filling meal.

Gordon Ramsay Steak Sandwich

This weekend my husband and I made an amazing meal based off Gordon Ramsay’s ultimate steak sandwich. I have the video linked above, so I won’t list everything in the original recipe, only what we did different.

It doesn’t look like much, but it is so amazing

We actually used pork instead of steak, we cooked it in olive oil, thyme, salt and pepper. For the salsa I used jarred jalapenos instead of fresh and my husband had the genius idea of adding sauerkraut.

The final difference is the bread, the original recipe called for ciabatta bread, but I HATE ciabatta. So we sliced up French bread and toasted it.

All in all it was an amazing twist on his great tasting recipe, barely had any leftovers!

Mom, Where’s the Meatloaf?

If you know that line then you have seen Wedding Crashers. This blog has nothing to do with Wedding Crashers and everything to do with meatloaf.

If you are a mom and have a son like mine who hates anything green, then this is the blog for you!! I have tricked my “green hating” son into eating carrots, green beans and peas while eating his favorite food. Meatloaf.

I have tried so many different methods to make my son eat the food that he hates, which is mostly healthy stuff, but not always with him.

I tried

1. You will sit at this table until you eat all your food. Can’t watch your tv shows if your kid is sitting there, it’s basically a reward.

2. Screaming and yelling. That just doesn’t work people… ever

3. You’re grounded from… he just plays with something else

4. You’re grounded from everything! Follows you around and asks where babies come from, or makes new toys out of toilet paper rolls and other trash items

5. Catering to what he wants. It takes 45 minutes for him to poop because his body has no fiber

It is hard being a parent and the last thing any of us need is something to make it harder.

Enter my lots of Hidden Veggies Meatloaf

Ingredients, ground beef (can be chicken), bread crumbs, egg, bbq sauce and baby food… yep my secret ingredient is baby food.

I don’t measure anything by the way, I just “feel” what the recipe needs.

Blend all ingredients together

That’s a lot of bread crumbs… I felt too much

Cook at 450 for about 45 min to an hour

You have a happy kid who doesnt know he’s eating carrots, peas and spinach.

This idea is pretty versatile as well, you can use it for meatballs, in spaghetti sauce, if you coat them well, even chicken nuggets would work!
